BM #1 - AAE - Day 4 - Lebanese Pizza - Veg & Non-Veg

Some days its just boring to cook an elaborate meal. Once in a while everyone needs a change in their taste buds. So the easiest thing to do is to make one dish which serves as a filling dinner and is quick and easy to make.

I do regularly make Pizza at home, using a readymade pizza base. If time permits, I would love to start from scratch. But given the hectic schedules, I find it easy on myself to just get the base from a good bakery. Normally we make the regular tomato-mozzerella pizza or a veg pizza. This time I thought of making something different.

Have you ever tried Hummus as a sauce for your pizza? I tried this wacky combination this time. Trust me its very very tasty.

Lebanese Hummus Veg Pizza
Ingredients:

For the hummus:
1 cup boiled chickpeas, drained,
8-10 garlic pods,
1-2 tsp red chilli powder,
1 tsp black pepper powder,
1 tbsp extra virgin olive oil,
Salt to taste

For the Pizza Toppings:
1 cup grated mozzerella cheese,
1/2 cup black olives,
1/2 cup jalepenos,
1/2 cup cottage cheese, cubed,
1 tsp extra virgin olive oil for drizzling,
Some mint leaves
Method:

  1. Put all the ingredients except the olive oil in the grinder and make a fine paste. Pour it into a bowl. Add olive oil and adjust the seasoning as per taste.
  2. On the pizza base, pour a generous amount of the hummus and spread evenly.
  3. Put all toppings on the pizza. Drizzle it with olive oil. Top it up with copious amounts of mozzarella cheese and garnish with mint leaves.
  4. Grill in the oven for 10 mins at 180 degrees.
  5. Serve hot.



Lebanese Minced Lamb Pizza

Ingredients:

For the minced lamb:
250 gms of minced lamb recipe,

For the Pizza Toppings:
1 cup grated mozzerella cheese,
1 tsp extra virgin olive oil for drizzling,
Some mint leaves

Method:

  1. I have used some left over Mutton Kheema here. Follow the same recipe. However, for the pizza topping we need a dry version of the Kheema. So just dry up the minced lamb recipe by leaving it on the pan on simmer for some time. Keep stirring to ensure it doesn't get burnt at the bottom.
  2. On the pizza base, pour a generous amount of the minced lamb recipe and spread evenly.
  3. Drizzle it with olive oil. Top it up with copious amounts of mozzarella cheese and garnish with mint leaves.
  4. Grill in the oven for 10 mins at 180 degrees.
  5. Serve hot.

This recipe was a winner! It turned out so delicious and the combination minced lamb and cheese is outstanding. I would surely make this one more time, but that time I would do the pizza base as well. Next time you have left of minced lamb, you know what to do!!!
