Apple Crumble Cake

My friend, whom i met in a party, and i decided to catch up over tea today at my house..Since it was very informal i was quite lazy to do something for snacks..

I had a couple of apples staring at me in the morning..which had been abandoned for 2-3 days.. and I thought what better way to use them than to make an apple pie or a cake.. I looked through my book of cakes and found the Apple Crumble Cake recepie.

Honestly this was my first attempt with this cake.. but when i read through the recepie, it was fairly simple to make..no complicated indgredients nor did it seem time consuming.

Very simple to make..and goes very well with a hot cup of tea in the evening...

Ingredients:

For the crumble:
75 g self-raising flour
25 g caster sugar
40 g butter, chilled for 10 mins
1/2 tsp cinnamon pdwr

For the base:
115 g self-raising flour
75 g caster sugar
50 g butter, softened
2 eggs
3 medium sized apples, peeled, cored and sliced
50 g golden raisins

Method:

1.) Preheat the oven 180 degrees C. Grease a 6 or 7 inch cake tin and set aside.
2.) To make the crumble, put the flour, cinnamon, and sugar in a bowl. Rub in the butter into the mixture until it resembles breadcrumbs. Set aside.
3.) To make the base, put the flour, sugar, butter and egg into a bowl and beat for 1-2 mins or until smooth.
4.) Transfer the wet mixture into the cake tin and even out using a spatula. Spread the the apples and raisins on top. Sprinkle the crumble mixture. Using a fork, gently press the mixture down.
5.) Bake the cake for approximately 25-30 mins or until the skewer comes out clean. Allow it to cool for 10 mins before turning out on a serving plate. Sprinkle cinnamon powder and serve warm.

Tips: You can serve with double cream or custard and turn this into a gorgeous dessert.
